THE COMFORTING TASTE OF HOME-MADE PATATE E PEPERONI ( POTATOES AND PEPPERS)

The second recipe of the month is one of the easiest and yet tastiest Italian side dishes. It might sound weird, but it’s a comfort food for me something I make when I feel particularly homesick.

The original recipe requires frying but since I am not a big fun of frying (who is really??) I usually bake everything with abundant oil and that really does the trick!

2 lbs. sweet long Italian frying peppers
1 lb. long hot Italian peppers
2 tbsp. chili powder
2 tbsp. paprika
1/2 c. olive oil
2 lg. white potatoes
1 tsp. salt
1 tsp. pepper
2 tbsp. oregano
2 cloves chopped garlic
optional
vegan cheese
pitted black olives
Heat large fry pan. Add olive oil, heat. Add garlic and potatoes, peeled and cut into small pieces. Add paprika, chili powder, salt, and pepper. Add cleaned, seeded, and sliced sweet and hot peppers. Add oregano (and olives if you feel so inclined). put ingredients in a bowl with abundant vegetable oil, salt and spices to taste (I usually add some nutritional yeast for that extra kick, ya know…)  Place in try and bake at 385/400 until ingredients are soft and the flavours have blended together.
Once it’s ready you can add the vegan cheese and mix it in all melted and delicious! 🙂
