Toco Mayhem

Things were crazy last week. We had 172 people, but everybody got fed. Thanks for being patient as I assembled the tacos: perfection takes time. Here are the recipes for this week. Look forward to a hot bowl of vegetable soup next Thursday.

I am tasty tacos
Two cups dried pinto beans
2 bay leaves
1 sliced onion
1 clove garlic minced
1 ts cumin
1 ts chili powder
1 green
1 ts salt

Boil the bay leaf and beans for about 45 minutes in enough water to cover the beans. Add the other ingredients and simmer until the beans are very soft. Next pour off some of the liquid into a bowl. Mash or puree the beans to a smooth consistency. Add the liquid as needed to make the beans creamy.

Pepper topping.
1 red and 1 yellow pepper sliced
Cup tofu cubed
ts chilly powder
ts cumin powder
ts oregano
salt and pepper to taste
Sauté the onion and garlic till the onion turns golden, then add the chilly and cumin powder. cook about 30 seconds then add everything else and cook till done: about 10 minutes.
Stuff a taco shell with all the ingredients.
