Hello all, Another community dinner has come and gone, and I think we had a tomato sauce that would have done my mother proud. I hope everybody enjoined it. Next week, we will be dishing up glazed tofu, vegan mashed potatoes and spinach salad.

Herbed tomato sauce:
½ onion chopped
1 clove garlic
2 tb oil
1 small carrot grated
2 tb chopped green pepper
1 bay leaf
½ ts oregano
½ ts thyme
1 ts basil
2 tb chopped fresh parsley
2 cups chopped tomatoes
1 six-oz can tomato paste
1 ts salt
1/8 ts pepper
½ ts sugar

Sautee the onion and garlic in the oil until translucent.
Add the carrot, green peppers, and herbs. Cook for about a minute.
Combine all the rest ingredients and simmer for fifteen minutes.

I am smooth hummus

2 cups cooked chick peas
½ Cup tahini
¼ cup lemon juice
¼ Cup olive oil
2 cloves garlic
¼ Cup parsley
½ ts salt
1/8 ts pepper
¾ ts cumin
¼ ts paprika
¼ ts sugar
Water or oil till the hummus is smooth.
Blend all ingredients together. Play with the seasoning if you need to.
