LAST MOTHER HUBBARDS OF THE SEMESTER

Howdy Howdy!  This was the last mother hubbards cupboard of the school year!  We served 143 people this past week at Concordia’s multi-faith Chaplaincy.  Overall, the year was hugely successful.  A big Thank You to all the people who helped make this event possible.

I’m stepping down from my position as head chef for MoHubbs, but the program will very likely continue next year.  We hope to see you around next semester!

Corn Chowder:

Onions, vadallia

garlic

oil

basil, fresh

marjoram

oregano

papkrika

salt

carrots

celery

potatos

lots of corn

diced tomato

stock

Sautee onions in oil, 8-10 min.  Add garlic, basil, and other herbs and spices for about 1 min.  Add the stock and veggies.  Bring to a boil and simmer for about 10-15 min. until veggies are tender.  Add the tomatoes and season to taste.  It really is that simple.

Oatmeal cookies!

1/2 cup oil

1/3 cup brown rice syrup

1/3 cup soymilk

3/4 cup brown sugar

1 tsp. vanilla

2 1/3 cups whole wheat pastry flour

3/4 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. each cinnamon, nutmeg, and allspice

1/4 tsp. salt

2 cups rolled oats

1 1/2 cups raisins.

Mix wet, sift dry in separate bowls.  Mix together.  Bake at 350 for 10-12 minutes.
