Howdy howdy folks!

It was another exciting week for Mo-Hubbs!  The semester’s end is coming up fast and students are hungry from all that work!  It’s been busy here- yesterday we had 127 people come for food!

The stew we made was a green lentil pineapple stew and we had apple bread to go with it, so here goes…

Green Lentil and Pineapple stew:

onions

oil

garlic

cumin

dried chilies

salt

peper

lots’a green lentils

pineapple

carrots

Pineapple juice or other fruit juice

Bam!  Sautee the chopped onions in the oil until translucent (8min).  Add garlic and meanwhile, if possible, dry roast the cumin and chilies then blend in a spice grinder.  Add to the onions.  Add carrots and juice.  Let simmer until the carrots are cooked.  Add the cooked lentils (that you’ve been cooking in a seperate pot), salt, pepper, and other seasonings.  Grill the pineapple in a skillet and add to the stew.  Enjoy!!

Applesauce Cake: (regular-home-use-recipe-size-for-fun-times)

2 cups flour

1 cup sugar

1tbs. cornstarch

2tsp. baking soda

1/2tsp. salt

1/2tsp. cinnamon

1/4tsp. ginger

1/8 tsp cloves

1/4 tsp. mace

20 oz. apple sauce

1/2 cup soaked raisins

Mix the dry ingredients.  Add in the apple sauce and raisins.  Bake at 325 degrees for 45-60 minutes or until slightly brown on the top.  The texture on the inside is super chewy.  Enjoy!
