WOO!  It’s been another great week at Mo-Hubbs!We had “creamy” soup. sumptious hummus, and fresh spring rolls.  We had tons of people flood in this week too, and the food went fast- so be sure to get here early (5-7) next Thursday!

Sweet Potato-Coconut soup:

Onions

Oil

Garlic

Bell Peppers

Sweet Potato

Carrots

Salt

Nutmeg

Coconut milk

Veggie Broth

So…Sautee the chopped onions in the oil for about 8 min.  Add the garlic for about 1 min, then the spices.  Add the veggie stock and sweet potatoes, bring to a boil and simmer for about 20 minutes until all the diced sweet potatoes are cooked.  Meanwhile, roast the halved peppers in the oven on 400 with oil for about 25 minutes.  Chop when ready and cooled.  Add the coconut milk and peppers to the stew.  Further season to taste, heat, and serve!
This is pretty good thick and creamy (with plenty of coconut milk)!
